Recipes for ROASTED CAULIFLOWER VEGGIE TACOS Made with Organic Sprouted Grain Tortillas


8 Maria and Ricardo´s Organic Sprouted Grain Tortillas
Pico de gallo
Sliced avocado
Fresh cilantro leaves
1 large head cauliflower
2 tbsp oil
1 ½ tsp chili powder
1 ½ tsp paprika
1 tsp cumin
1 tsp onion powder
1 tsp garlic powder
Salt and pepper to taste
For the Slaw
2 ½ cups shredded purple cabbage
2 tbsp lime juice (about 2 limes)
2 tbsp plain greek yogurt
Salt and pepper to taste
For the Cashew Crema:
1 cup raw cashews
1/2-1 cup water
⅓ cup cilantro
2 tbsp lime juice about 1 lime
1/4-1/2 tsp salt or to taste
1 clove garlic


Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
Place the cashews in a bowl and cover them with boiling water. Set them aside to soften.
Chop the cauliflower into medium/small florets and place them in a bowl.
Toss the cauliflower with olive oil and add the chili powder, cumin, paprika, salt, and pepper. Make sure the cauliflower is well coated.
Spread the seasoned cauliflower on a baking sheet lined with parchment paper. Roast for 25-30 minutes, or until they start to brown on top. To avoid burning, consider turning off the oven after 25 minutes and letting the cauliflower sit for an additional 5 minutes.
While the cauliflower is roasting, combine the shredded cabbage, chopped cilantro, lime juice, salt, and pepper in a large mixing bowl. Toss to combine
After the cashews have softened for about 30 minutes, drain them. Add them to a high-speed blender along with lime juice, water, garlic, chili powder, salt, and pepper.
Start with 1/2 cup of water and add more to achieve your desired consistency. Usually, 3/4 cup total works well, but it depends on your blender. Taste and adjust the flavors as desired.
Assembling Tacos:
To assemble the tacos, place a base of roasted cauliflower on each Maria and Ricardo´s Organic Sprouted Grain Tortilla.
Layer on the slaw, pico de gallo, sliced avocado, and fresh cilantro leaves.
Drizzle the cashew crema over the top.
Serve your cauliflower tacos with a side of cilantro lime rice and black beans. Enjoy your delicious and nutritious meal!
