Ingredients

For The Tostadas
6 Maria and Ricardo´s Gluten Free Cauliflower Tortillas
1/2 cup hummus
Mediterranean salad
Tahini (Sasame Seed Butter)
For The Salad
1 ½ cups chopped cucumber
1 cup chopped cherry tomatoes
½ cup chopped green olives
1/4 cup diced artichoke hearts
1/4 cup diced shallot or red onion
1/4 cup chopped parsley
1 tablespoon olive oil
Juice of ½ a lemon
Salt & pepper to taste

Preparation

In a mixing bowl, combine the diced cucumbers, tomatoes, sliced olives, finely chopped shallots, diced artichoke hearts, and fresh parsley.

In a separate bowl, whisk together the dressing ingredients, including olive oil, lemon juice, minced garlic, salt, and pepper.

Pour the dressing over the salad and toss everything together to ensure it's well combined.
Making the Tostadas:

Toast the Maria and Ricardo´s Gluten Free Cauliflower Tortillas until they become golden brown and crispy.

On each toasted tortilla, spread a layer of hummus, using approximately 2 tablespoons per tortilla.

Top the hummus layer with about 1/4 cup of the prepared salad mixture.

Drizzle tahini over the top of each tostada.
