Ingredients

For The Salmon:
4 (1/3 - ½ lb) salmon filets
2 tbsp olive oil
1 tsp chili powder
1/2 tsp smoked paprika
1/4 tsp hot pepper flakes/cayenne
Generous pinch of salt
To Serve:
8 Maria and Ricardo´s Original Whole Wheat Plus Tortillas
Thinly sliced red cabbage
Diced avocado
Limes
Cilantro
1 batch mango salsa

Preparation

Preheat your oven to 400ºF (200ºC).

Place the salmon filets in a baking pan.

In a small bowl, whisk together the olive oil, chile powder, cumin, paprika, and salt to create the marinade.

Pour the marinade over the salmon, ensuring each filet is well coated. Set aside while you preheat the oven.

Once the oven is ready, place the salmon in the oven and bake for 15-18 minutes, or until the salmon is cooked to your desired level of doneness.

While the salmon is cooking, prepare the salsa. When the salmon is done cooking, remove it from the oven and set it aside.

Warm the Maria and Ricardo´s Whole Wheat Plus Tortillas and place them onto four plates.

Use a fork to flake the salmon, and distribute half of each filet onto each tortilla shell.

Top the salmon with shredded cabbage, mango salsa, sliced avocado, and fresh cilantro leaves.
