  • 8 Maria and Ricardo’s White Soft Yellow Corn Tortillas
  • 8 eggs
  • 8 pieces of bacon
  • 1 Avocado sliced
  • 1 tablespoon butter
  • Salt and pepper to taste
  • OPTIONAL Garnishes: guacamole/avocado, salsa, sour cream/crema, hot sauce, cilantro leaves, squeeze of fresh lime, sliced radishes, pickled onions, shredded cheddar cheese


  1. Pre heat oven to 400 degrees. Place bacon on a sheet pan and cook for 25 minutes
  2. Cook eggs your favorite way
  3. Assemble Tacos- in a dry 12 inch nonstick pan on medium heat place 4 tortillas and cook on each side approximately 30 seconds. Add bacon and eggs on bottom half of tortilla and add your favorite toppings
